VINTAGE: 2006
OLIVE VARIETY: Grignano 50%, Perlarolo 30%, Leccino 20%
MAJOR GROWING AREA: Fondo Monte Tenda. Altitude: 200 metres a.s.l, stoney terrain.
PRODUCTION METHOD: multi-branched and vase-shaped.
HARVEST: manual harvesting of the olives at the colour-change point prior to full ripeness between the end of October and and the end of November
PRESSING: cold pressing within a few hours of the harvest. The extraction method used is continuous followed by natural racking.
PRESERVING METHOD: the oil is preserved under nitrogen in stainless steel tanks ranging in size from 36-100 litre capacity.
CHARACTERISTICS OF THE OIL: dense and bright, with golden highlights. Intense and elegant on the nose, immediately reminiscent of herbs, tomato plants, hazelnut and aubergine, then giving way to sweeter aromas of green apple, elderberry and banana. On the palate it releases an unexpected spiciness, together with the barest hint of bitterness reminiscent of artichoke, walnut husk and black pepper.
