MAIN GROWING AREAS: Fondo Cereolo, and Fondo Monte Tenda. The altitude varies from 160 - 200metres above sea level.
CULTIVATION METHOD: Pergola and espalier. Production: approx 6 tonnes per hectare.
HARVEST: from mid September.
PARTIAL DRYING: for 15 days with an average weight loss of 10-15% in humidity-controlled lofts.
PRESSING AND FERMENTATION: the grapes are crushed in October in the wine press and then transferred to the fermentation vat. The must is left to settle for 12-24 hours and then racked off to eliminate the lees. Fermentation then takes place for 15-20 days in temperature-controlled stainless steel tanks using selected yeasts.
WINEMAKING AND AGEING: the wine is racked and then transferred to French oak barriques for several months. At the end of this period, it is fined and filtered and is ready for bottling.
CHARACTERISTICS OF THE WINE: the wine is a straw-yellow colour, with pale golden highlights. On the nose it is pleasantly reminiscent of acacia flowers and citrus fruits, while on the palate it is elegant, perfectly balanced with a good degree of acidity and tanginess.
